Freshly Milled breads update.

Where and What have we been up to
We know it may be hard to believe, but summer is just around the corner and with summer comes Farmers Markets! We are currently attending many farmers markets and will be attending more as summer approaches. They include the Snellville, Norcross, Lawrenceville, and Spout Springs farmers markets. We will continue to keep you updated as we are accepted into other farmers markets. We are currently making most of our bread in a commercial certified kitchen at Rancho Allegre Farms. What's New
In addition to the farmers markets, we are also updating and adding new products to our website. At the request of a dear costumer we have created a spelt stevia bread, which taste delicious.
We have also had a request for a cranberry spelt bread and oat bread. We are currently working on a batch. So stay tune!
If there is any kind of bread of bake goods you would like to see us make. Please contact us and make a request. We love creating and trying new things!

A Great Week

We have a beautiful day here at Freshly Milled Breads. The rain cleared the air so it is perfect to mill wheat and bake our bread. Today we are cleaning and organizing the kitchen for Friday which is our day to bake for the farmers markets

The menu for tomorrows baking is raisin bread, which is our best seller. Followed by Ezekiel bread which is the most nutritious. Ezekiel bread is a blend of four grains (wheat, spelt, barley, and millet) plus four legumes (lentils, great northern beans, kidney beans and pinto beans). The combination of grains and beans makes a complete protein.

The new addiction for this Saturday is rye bread. Irma has a simple, yet delicious receipt which results in a beautiful delicious loaf. Don't miss this we will be serving samples

I saved my favorite until last- “The Special Tortilla Receipts” This special receipt yields very special results. A wonderfully nutritious taste treat. We hope to have samples, but you can always purchase a pack and create your own samples.

Regarding Freshly Milled Whole Wheat Tortillas

My step mother is here from California and she is here visiting with my dad! She was born in Mexico. I have always enjoyed making freshly milled whole wheat tortillas, but the family always said they tasted more like crackers! Since Juanita (my step mom) is a professional flour tortilla maker (she said her father taught her to make homemade tortillas at that age of 15). I thought I might be able to learn how to make tortillas that could roll into a burrito! Since mine were more like crackers! So we made the first batch with whole wheat pastry flour. Wow I could actually roll them. I told her it was probably because we used whole wheat pastry flour. I told Juanita there is no way the tortillas will turn out this good with hard red wheat. The tortillas will probably turn out like a cracker! Guess what? The tortillas made with hard red came out better and more pliable! You will now be able to purchase these delicious freshly milled whole wheat tortillas. They are made with freshly milled hard red grain, extra virgin cold pressed olive oil, aluminum free baking powder and real salt from Redmond which contains natural minerals which have not been lost with processing.

Gluten Free Breads!

Hi guys, I really enjoyed this past Farmers market, I was able to speak with many health-conscientious customers interested in gluten free bread! I'm really excited to try out many new recipes that call for natural, healthy, gluten-free ingredients!

This week we are going to try a high protein and lowcarb gluten free quick bread, made with almond flour. It’s more expensive to make because of the cost of the fresh, raw almonds which are freshly ground into flour, and will be available at the farmers market this Saturday!

Last week in addition to our regular freshly milled whole wheat breads, we had a few loaves of gluten free banana nut bread. This was a great success! However gluten free bread texture differs from regular freshly milled whole wheat bread. My recommendation for tasty gluten free bread is to lightly toast the bread with a touch of any topping of your choice!

This week we'll also have brown rice millet bread!

Busy Busy Busy!

I have grown weary in my blogging... too much going on. Well I've been making 70+ loaves of bread every Friday and Praise the Lord we have been selling out every Saturday at the Farmers market. I'm not able to go to the Farmers Market all the time because I usually work almost every Saturday :( But I have heard we have a lot of returning customers which I am very excited about! I need to make sure to tell Babbs (my Top sales person) to take some pictures of our returning customers so we can post them on the blog and/or Facebook.

This Friday I had to wk from 8:30 to 5:00pm and then come home and make bread, those 70+ loaves, and this time I had Curly (my oldest daughter, she'll be 20 this month) as my helper. With me working full time in retail (meaning I have a very random schedule) and Curly working full time in a doctor's office we miss each other throughout the day, so it was real nice being in the kitchen with her making bread for over 7 hours. I let her put on her music and we had some laughs while we shook our booties to her music. You should have seen Jerry and Irma (my mom and step dad) they thought we were pretty crazy, but the grove was contagious because they too tried to shake it up! Curly and I ended up going to bead after 1:30am. I had to work Saturday morning and Curly got to sleep in a bit while Babbs rose early to sell the breads! (Just a side not... I then rose early again on Sunday Morning , with Curly to participate in a 10k) Yeah it was a real busy last 3 days, just like last weekend. Last weekend I had my dad come visit, a family reunion to attend (on David's side of the family) ,David's Birthday, work, and those 70+ loaves to make, all in 3 days also. I'm pretty much working 6 days a week with one day off to get other things done like catch up on my children's life, and my husband, clean, do laundry, run errands and exercise (Sorry I think this is becoming more of a venting page.) I haven't blogged for, I think, the last 2 weeks, cause there seems to be so much going on and it's more than just the Freshly Milled Bread. I mean, I haven't even bought the deodorant I've been needing for the last 2 weeks. I'm Literally using David's deodorant. So well I'm at work in the midst of my own perfume aroma there's a lingering odor of a manly scent. I'm hoping I'm the only one who notices.

This is cool freshly milled news: At the Torbett Family reunion my uncle did a little communion service outside and they used our raisin bread. As the they passed half the loaf around for us each to take a piece, my daughters and I looked at each other and said, "Wow! that's real good bread" (I'm so busy making it for selling I don't ever make extra for the family). When my little nephew (Carson almost 2yrs old) was given his little piece, he followed the loaf around wanting more and more. After it had been passed to everyone my uncle (the Pastor) set it at the table in front of him as he continued the service and little Carson kept going back and forth to my uncle with hand reached out for more bread. My sister in law said Carson never eats bread and so she was shocked he liked it so much. After heading back to the house there came in my other nephew (Chris 4yrs old) with the rest of the loaf, he sat at the table finishing the raisin bread all by himself. It would have been a picture moment! That made me feel real good about our bread. This week we had some left over from our sample loaves and I have been eating it every day as a snack and for breakfast, and let me tell you... my BMs are like clock work. It's all that fiber!

I'm really excited about this bread opportunity even if it only last till Oct. But if it can continue longer with the opportunity of a little business , that would be great too!

2nd day at the Farmers Market

I am going against the flesh...I do not want to blog.

Yesterday 6/12, Friday I worked at 830am till 530pm, came home, prepped the kitchen, and made bread. I was up till 200am, and woke up at 630am the next morning to make more bread. Then it was off to the farmers market. This pretty much sums it all up. My mom's day was just as hectic: she was up by 715am, the baby she baby sits came before 800am (my mom watches her till 600pm), my mom made fresh spaghetti sauce (so we could all have a home cooked meal in the midst of our busy day) and she made 4 batches of coffee cake. When I came home from work she helped me prep the kitchen and was my helper in getting all the breads made (and she calls me super women...now we know where I get it from). In the kitchen was my mom, jerry (my step dad), and myself all working like little busy bees. As I watched us working together in the kitchen I thanked the Lord, cause what we do is a team effort and not one person can get more credit that the other, God gets all the credit, He orchestrates it all! It was truly a moment of gratefulness. Did I mention... Jerry ground all the flour approx 50lbs, as needed.

Now of course there was some doozies along the way. Not getting into too much detail: #1- My mom only wanted to double the recipe for the coffee cakes ( she had never quadrupled it and didn't want to take any chances), but Someone had other plans. Mom accidently added 4x the amount of baking powder than was needed, forcing her to make a quadruple batch of coffee cake vs. the double batch she had planned. #2-Trying to get others to follow instructions is not very easy, especially when you're telling your mom what to do. It's hard when the roles are reversed and my mom has to do what I say, she has many years of "cooking experience", but none in "bread making experience.". And #3- When we were on our last 10 loaves of bread (at 12ish...am), and they were on the counter rising, we started cleaning up the kitchen... and someone (I'm not mentioning any names) somehow broke a coffee cup on the counter and it shattered on to the bread. We had to throw out a little under 20lbs of bread dough. There was no way I was going to start 2 new batches of bread. By the time we cleaned up the kitchen and got the breads and coffee cake slices bagged , labeled and packed it was after 130am.

I rose early to make the 2 batches of bread again and met everyone at the farmers market at 930am. It was good we made the extra bread cause once again we were sold out before 11am.

Let me tell you the miracle in all this: We all got along, nobody broke out crying when we had to throw out all that bread. We took peace in knowing God was in control. To God be the Glory Great things He hath done!!!!!!!!!!!!!!

My brother Josh helped out in cleaning the kitchen and getting the labels all ready for the breads, my husband David was a GREAT help in just being there when I needed him and always had encouraging words, and of course the girls were the a great help in selling the bread, and passing out the samples, and sharing the ingredients we used ( emphasizing all the stuff that's good for you...that's how David puts it).
