Regarding Freshly Milled Whole Wheat Tortillas

My step mother is here from California and she is here visiting with my dad! She was born in Mexico. I have always enjoyed making freshly milled whole wheat tortillas, but the family always said they tasted more like crackers! Since Juanita (my step mom) is a professional flour tortilla maker (she said her father taught her to make homemade tortillas at that age of 15). I thought I might be able to learn how to make tortillas that could roll into a burrito! Since mine were more like crackers! So we made the first batch with whole wheat pastry flour. Wow I could actually roll them. I told her it was probably because we used whole wheat pastry flour. I told Juanita there is no way the tortillas will turn out this good with hard red wheat. The tortillas will probably turn out like a cracker! Guess what? The tortillas made with hard red came out better and more pliable! You will now be able to purchase these delicious freshly milled whole wheat tortillas. They are made with freshly milled hard red grain, extra virgin cold pressed olive oil, aluminum free baking powder and real salt from Redmond which contains natural minerals which have not been lost with processing.
